Of course. You can wear it on your road bike or your gravel bike just the same. You will feel the comfort in every pair of shorts.
Basically it's a question of taste. We recommend our long winter thermal bib tights at <10 °C.
No, you should do without underwear entirely. Our bib shorts are designed so that the chamois sits directly against the skin. Any additional layer of fabric in between would crease, hold moisture and, with the constant movement in the saddle, lead to painful chafing. The materials used are highly breathable, soft on the skin and antibacterial, to give you the best possible comfort even without underwear.
That is completely normal and exactly as intended. A good pair of bib shorts is tailored for the position on the bike, not for standing around. When you stand upright, the strap construction can tighten and pull the shorts up slightly at the crotch. As soon as you lean forward in the saddle and take up the typical riding position, that pull disappears. In this position the straps make sure that nothing slips and that the chamois stays exactly where it belongs.
